A really hot mustard [General]

Hi everyone! Well, I'm used to eating really hot mustard, made in the Russian style. But I found out that it's pretty difficult to find one around here. I tried to make it myself, but it was nothing to do with what I'm used to.. I talked to some people, who told that "yellow mustard seeds" and "yellow mustard powder" that are mostly sold here, are best for marinades, sauces, pickles, but not for the real mustard. Does anyone know a place where I could by seeds or powder of different kinds (not only this "yellow" thing)?? Trying to buy the ready-to-eat prepared mustards that state "hot" on the label doesn't work :( It's not the same thing...

PS I've been to a shop on Sparks that shares place with L'Ange - Marvellous Mustard Shop - they had neither seeds nor powder.

PSS Adding habanero pepper while making mustad does make it hot, but it's a taste that is very different from the mustard that is hot by nature.

Not sure if this helps, but Chilly Chiles out in Navan has Kozlik's Hot Russian Mustard:

Moscovite - I'm guessing that the secret ingredient to the "heat" in your mustard might be horseradish!?

I hear you about "yellow stuff", it is difficult to find much else in the local grocery stores... Dijon or Grainy Mustard is a "stretch" for the masses. LOL

You might try dropping an e-mail to Mrs. McGarrigles, I don't think there is a hot mustard in their line-up, but I bet they could point you in the right direction. As one of North American's award winning mustard makers I would think she has seen it all at competition.

Chilly Chiles no longer carries the Kozlik brand, (the Russian mustard was not all that hot)
Muscovite is right. The addition of habanero or other chile peppers gives a nice heat at the back of the throat, but not that type of heat that you get more in your nose from a good hot mustard.
I'm not sure I've ever tried a true Russian style mustard though, so would be interested in hearing if you find one!

Just a further to the "Kozlik" brand:

I love "Anton Kozlik's Canadian Mustard" which I discovered a few years ago in Toronto where they have an extensive stand at the St Lawrence Market. They basically make every kind of mustard known to man (including Raspberry Mustard, and Lemon Mustard if you can believe it). I'm a big fan of thier "simpler" grainy mustards ("Double C" and "Triple Crunch") - they really know what they are doing! For your specific needs they do offer "Russian", "Hot Russian", "Really Hot", and "XXX Hot". The stall in SLM in Toronto has the full line available, however there are several vendors in Ottawa that offer some of thier products - never seen somewhere that carries the FULL line here though - you may have to call around to see if someone has the flavours you want in stock (or if, indeed, like the chili place, has stopped carrying it). The shops that do carry the products may be able to order a flavour specially for you, or you can probably order directly from the company online or something. Check out the site below for a full list of products, and the website also has a list of locations for Ottawa and surrounding areas that carries thier stuff (quite a long list - you should be able to find it somewhere :) I've most recently seen it at Saslove's on Wellington and in The Ottawa Bagel Shop on Wellington - so those might be good places to start:

I'm not sure if it fits the bill, as it is a "yellow" mustard, but Colman's Prepared Mustard (Original English) is readily available at Loblaws and will certainly clear out your sinuses! It has the same kind of heat as horseradish or wasabi, but only contains water, mustard flour, sugar, salt, wheat flour, spice, and citric acid. It's good stuff!

Warsaw Deli on Richmond Rd carries a variety of european mustards, hot, regular, horseradish, whole grain, mustard in a tube, etc.

Just make your own mustard! Dont be lazy. I just made up this recipe last night and it worked great. Took me 30 seconds to throw together and another 30 to blend. Great mustard.

Hot Grainy Mustard

½ cup yellow mustard seeds
½ cup black mustard seeds
½ cup white wine vinager
½ cup water
4 tbsp honey
Pinch thyme
Good pinch of pepper/salt
Combine everything and let sit 2 hours, blend.

Da Butcher - that's the question, I want to make it myself, but I couldn't find anything but the "yellow mustard" seeds/powder. If you tell me where did you get black mustard seeds, probably it will be the clue to the whole issue. Thx!

Black mustard seed should be readily available at Indian food stores. They might be labelled "Rai".

Go to the mid east food center on st.larence they have buckets of black mustard. Or like momo said, pretty much any indian food store.
